Many people buy this machine to save money from the expensive coffee houses.

I bought it because the nearest location I can buy a Frappe is 25 miles from home ...
I also bought it because I like coffee in the afternoon, and I could use decaf ...
And then there's the fact that I'm diabetic and need low carb choices ...

So for me, it not only saves money, but it makes the impossible possible.
I've been using the Gevalia Dark Chocolate Truffle Ground Coffee, Decaffeinated, 8-Ounce Packages (Pack of 3), with 1/2 cup water in the top. Then in the blender I add 2 cups of ice, 3 TBS low Carb chocolate syrup, Equal, and 1/4 cup nonfat milk.

Three minutes later I have a scrumptious frappe, fully approved by my doctor! Because of the low calorie count and the lack of caffeine, I can have as many of these as I want at any time of day. Right now I'm whipping one up for breakfast and another one in the evening as a low calorie substitute for ice cream.

Everything on this is easy to use and easy to clean. It made no more noise than the blender I was using to try to make my own (unsuccessfully), and not a drop leaked anywhere. Everything locks tightly for a safe and mess-free experience.

I love the recipe book included (which even has some alcoholic options), but the best part for me is being able to substitute what I like to make my very own perfect frappe. I like mine light (like McDonalds), but if you want a heavier coffee flavor, you simply add more grounds to make it your way.

I've put my coffee maker away for the summer (maybe forever), and moved the blender back under the counter. Since this is smaller than my blender, it hardly takes any counter space.

Fortunately, I opened the box before I brought it home and realized it needed the 4 cup basket filters, so I was able to grab them while I was still at the store. I bought the 2-4 cup size which fit perfectly. But other than wishing the information on the filters was included in the details on the outside of the package, it was a wonderful purchase for me.

I bought this locally on sale, and as a result this will more than pay for itself in about two weeks ...

*** NOTE *** The video is "real time" so you can see exactly how long it takes to go from beginning to end. It actually took me longer to upload the video to Amazon than to make the Frappe - and in the time it takes you to watch the video, you could be sipping yours!

      SPECIAL NOTE
Mr. Coffee has recently come out with a latte maker Mr. Coffee BVMC-EL1 Cafe Latte. If you are looking for something similar to use for your winter drinks, it is nearly as awesome as the frappe maker. I have posted a video there as well, and now rotate between them based on season.

*** Edited Review *** I purchased a second Frappe machine for my daughter which we used about 5 times a day for a week. She is using ice cubes from her freezer, and even though we were sure her lid was secure, one of the ice cubes caught the lid wrong (or is it right) and loosened it, causing the "kitchen mess" others have reported occurred. This happened once in about 35 times of use.

I am using smaller crushed ice and ice from an ice machine (small and round) and have not had it happen on my machine yet, even though I have made more than 70 frappes in my machine - but I have removed a star, Mr Coffee really does need to make sure the lid is secure and locks.

****Second Edit**** This morning (about 10 months after I purchased the Cafe Frappe, my unit would not power up. :'( However, I called customer support and they were able to walk me though a quick fix. I'm back up and running. Since customer support is important to me, I wanted to add this to my review.

Wusthof Classic 10-Piece Knife Block Set

    Product Description

Wusthof Classic 10-Piece Knife Block Set, Ja Henckels Four Star Piece Block Set Review Known worldwide for their superior performance, Wüsthof knives are the cutlery of choice among many professionals and by discriminating amateur chefs. The Classic series features a traditional styling that makes it the most popular of the Wüsthof lines. The blades are formed with the perfect balance of high-carbon steel and a stain-resistant alloy so they retain their edge longer and are easier to resharpen. The blade is ground and polished by computer, ensuring perfect tapering from bolster to tip, and the edge is then hand honed for precision slicing. The sturdy feel of this knife is achieved by the weighted bolster, which is considered to be Wüsthof's signature feature. The tang runs through the synthetic handle and is secured with three rivets.

Perfect as a wedding gift, this 10-piece set has all the kitchen cutlery basics with room to grow. The knives in the set include an 8-inch cook's knife, an 8-inch carving knife, a 6-inch sandwich knife, an 8-inch serrated bread knife, a 5-inch serrated sausage knife, a 4-1/2-inch utility knife, and a 3-1/2-inch paring knife. A pair of kitchen shears and a 9-inch sharpening steel complete the set. Everything fits neatly into the rubber-footed oak block, which has space to eventually add six steak knives and two more prep knives.Cristina Vaamonde

What's in the Box 8-inch cook's knife; 8-inch carving knife; 6-inch sandwich knife; 8-inch serrated bread knife; 5-inch serrated sausage knife; 4-1/2-inch utility knife; 3-1/2-inch paring knife; kitchen shears; 9-inch sharpening steel; rubber-footed oak block with eight extra slots.

It might seem like a lot to spend for a set of knives, especially with the infomercials that show people sawing bricks in half with their product, then micro cutting a tomato all for $19.95. But this is a lifetime purchase. The knives are balanced and have a great weight and feel in your hands. A quick honing with the steel each use and they stay frighteningly sharp. Like everything else, if you have the right tools, the job is infinitely easier, safer and more pleasurable. I've had my set for over a year and they seem as new as the day they arrived. One note of practicality is that I don't really need all the knives in the set and regularly use only four. If really pressed or confined in a budget you could get along nicely with just two; the 8 inch cooks knife and the 3 1/2 inch paring knife, and of course a steel. Don't be tempted to put them in the dish washer. They clean very easily with a soapy sponge. Intense heat will change the steel in the blade and can be nicked and damaged. Just a final note that Consumer reports rated Wusthof as the best in their tests as well. There are several handle designs, but personally I like the Classic. The Culinar Premiere is beautiful and has all metal handles which are seemingly more durable. But at twice the price are for the very well heeled only. Highly recommended; you won't regret your purchase.

A friend of mine is a professional chef for an up-scale restaurant in downtown Seattle. He uses Saber Knives exclusively and claims they are by far the best on the market. I had no idea where to find a set; he got his through a chef supply place in New York. I've been checking on-line for some time now and then...finally Amazon has the same set he has. I bought a set immediately and they are fantastic! If you are serious about cooking and want the best in the kitchen, this Saber Knife Set will make you very happy.

Global G48338 3-Piece Hollow Ground Santoku Knife Set

    Product Description

Global G48338 3-Piece Hollow Ground Santoku Knife Set,Anol 52588 Advanced 15 Piece Knife Set Product Description Be prepared for most any prep task in the kitchen with a uniquely designed 3-piece knife set that includes a 7-inch hollow ground santoku, a 5-1/4-inch utility knife, and a 3-1/2-inch paring knife. Global knives are distinct in design and therefore function. Forged in Japan from CROMOVA 18 stainless steel, Global knives have a smooth contour and seamless construction. The lightweight knives reduce hand fatigue associated with repeated chopping and mincing, and handles are dimpled to provide a non-slip grip. Global uses a hollow handle filled with sand to create balance. Their thin and razor sharp blades allow cooks to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. Blended from 18 percent chromium for good stain resistance, plus molybdenum and vanadium for excellent edge retention, Global knives are designed for long-term use. They are face-ground with a long taper, so edges remain sharp longer. As with all fine cutlery, hand washing is best for care.

What's in the Box? A 7-inch hollow ground santoku, a 5-1/4-inch utility knife, and a 3-1/2-inch paring knife.

I did a lot of research before purchasing my first knife set. I'm a recent college grad and want to start collecting some quality kitchen equipment to last me a lifetime (hopefully). My initial tip on these kinves was from the book "Kitchen Confidential" by Anthony Bourdain - a great read if you are interested in exploring cooking and the restaurant world or "culinary underbelly" as I believe he calls it. Bourdain recommends Global knives in the book.

These knives are the sharpest I have ever used. They are also very light and a delight to hold - great craftsmanship. My mother kept a set of heavy German knives that were dull as rocks (I don't think she ever sharpened them, well maybe once a decade) and it was always frightful to use them growing up as I felt I'd cut my finger clear off trying to get a raw potato sliced (I loved making the mashed potatoes).

The three piece set gives you a lot of versatility. I've even *gasp* used these as an impromptu cardboard box cutter. One cool thing about this set is it includes a Santoku as the main chef's knife. According to Wikipedia, the "'granton edge' release pattern (scalloped) on the blades that not only adds style, but helps to release thin slices and sticky food after slicing." Cool.

Looking into sharpening options - suggestions welcome.

Thank you Amazon for the very timely delivery (it currently looks like they are on backorder or something, though).

    Shun Classic 6-Piece Knife Set

    Posted on November 27, 2011

    Product Description

Shun Classic 6-Piece Knife Set,Zwilling Ja Henckels Twin Pro S Piece Knife Set Review This ultra-efficient six-piece set includes the three blades a typical home chef uses most: an eight-inch chef’s knife for all-around kitchen work like mincing garlic and chopping vegetables, a parer for small-scale tasks like trimming and peeling, and a utility knife for slicing meats, sandwiches, and other sundries. Also included are shears for snipping herbs or opening packages, a bamboo block to store and protect knives, and a sharpening steel. Attractively packaged in a special gift box, this set makes an unforgettable gift for newlyweds, budding chefs, or anyone who appreciates kitchen tools as beautiful as they are functional and long-lasting. Shun knives are made from VG-10 stainless steel, specially constructed to be harder, less brittle, but also more flexible than traditional steel formulations. The VG-10 core is then clad with 16 full layers of high-carbon stainless steel on each side, for a grand total of 33 layers. These layers not only protect the VG-10, they create an exquisitely-detailed surface reminiscent of Damascus or pattern-forged steel, the kind once used for Samurai swords. As a result, these knives are simply stunning to look at--much like antique Damascus knives but without their tendency to rust. As an additional benefit, the slight patterning helps slice rather than crush delicate foods and keeps cut food from sticking to the blade. Like many Asian-style knives, these feature handles that are especially suited to smaller users. In contrast to the traditional round profile, however, Shun’s are D-shaped to prevent the knife from twisting in the hand, providing extra stability and a firm grip. The handles are made from ebony-colored Pakkawood, a fused blend of hardwood veneers imbued with waterproof resin that combines the warmth and traditional look and feel of wood with the strength and durability of plastic. The offset stainless steel bolster is designed for ergonomic comfort and maximum safety, while a stainless steel end cap provides the finishing touch. As sturdy as they are lovely, these knives are officially safe to put in the dishwasher--although they’re so good-looking you might find yourself hard-pressed to do so. Shun knives are covered by a limited lifetime warranty. --Mary Park

What’s in the Box 8-inch chef’s knife, utility knife, paring knife, sharpening steel, kitchen shears, and bamboo knife block.
This review is from: Shun Classic 6-Piece Knife Set with Bamboo Block (Kitchen)
I loved my Shun Classic 6.5" Santoku knife, so I purchased a 6-piece set (except my set came with a 9" serrated bread knife instead of the utility knife). Shun is the best! For the most control and best grip, I was told to hold the knife close to the blade with my index finger on the metal ridge. It seemed a little awkward at first, but it's very comfortable once you get used to it! I love the weight of the knives, the wooden handles, and the sharpness of the blades. They do, however, need to be sharpened occasionally (I judge this by how well they cut through a tomato). I was told that you should use the boning steel every time you use a knife, but I have never used it. Instead I've been using the MinoSharp Plus sharpener, which sharpens the knives extremely well. If I could only have one knife I'd get the 6.5" Santoku (not in this set) because I use it far more often than any other knife. However, the large chef's knife is much better for cutting large, hard foods like squashes and melons. I love the multi-functional scissors (they come apart so you can sharpen them and clean them well), and I like being able to protect my knives and keep them together in the wooden block.

Zwilling J.A. Henckels Twin Pro-S 18-Piece Knife Set

    Product Description

Zwilling J.A. Henckels Twin Pro-S 18-Piece Knife Set, Ja Henckels Internati Al Classic Ged 7 Piece Stainless Steel Knif Review This set supplies a cook with just about every cutting edge, all stored on the countertop. It consists of seven kitchen knives (2-3/4-inch peeler, 2-3/4-inch paring knife, 8-inch chef's knife, 4-inch utility knife, 5-inch serrated knife, 5-inch Santoku, 8-inch bread knife), eight steak knives, kitchen shears, a sharpening steel, and a heavy wood block with slots for everything, plus two extra slots. It also includes a bonus Zwilling cookbook CD. Classic three-rivet handles distinguish Pro S from the company's other quality knives. Pro S handles are heavier and its knives less weight-forward. Handles are also smaller, which the small-handed might appreciate. Like other top-grade Henckels knives (except for the fully forged paring knife), Pro S blades are formed by a high-tech welding process that combines three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics. Traditionalists might insist on single-piece forging for strength, but Henckels says the invisible welds are stronger than the steel. --Fred Brack

I take exception to Mr. Michael George's (Scottsdale, AZ.) reveiw of this knife set, Henckels Pro "S" series and forged, bolstered knives in general. If he has been a professional for 14 years then he should have learned the term "bolster" by now...and he should have been able to sharpen his knives properly without wearing the edge out...he's probably using an electric sharpener or sending them out. The culinary school reference is questionable also...Le Cordon Bleu uses Mundail knives...etc.This a top of the line set and shouldn't be maligned out of ignorance. If you learn how to use the steel that is provided and a good fine stone then these will last you a lifetime. We defend the honor of these mighty fine blades with 6 mojo*z

    Product Description

J.A. Henckels International Forged Synergy 16-Piece Knife Set,Shun Dms300 Classic 3 Piece Boxed Cutlery Set Product Description Combining contemporary style with great value and excellent durability, this 16-piece knife Forged Synergy set from J.A. Henckels brings a modern Asian sensibility to your kitchen with the inclusion of a santoku knife and a vegetable knife with its fine-edged, symmetric blade. This set includes the following knives: 3-inch vegetable (kudamono), 3-inch paring, 6-inch utility, 7-inch santoku, 8-inch chef, 8-inch carving, and 8-inch bread. It also comes with a set of 6 steak knives (4-1/2 inches), a 9-inch sharpening steel, and a pair of kitchen shears. All items fit neatly into a hardwood storage block with contemporary black finish.

Perfect for smaller jobs like cutting, peeling, and cleaning fruits and vegetables, the kudamono paring knife has a slim blade with center tip and hollow cutting edge, which allows air between the blade and the item you are slicing to avoid sticking to the blade and ease of slicing. And the santoku knife, which is style after the classic Japanese cook's knife, has broad blade and especially sharp cutting edge that's great for cutting fruits and vegetables.

Made from high-quality stainless steel with a satin finish, the knives also offer a molded POM handle with brushed stainless steel cap and rivets for a comfortable grip and contemporary style, full rat tail tang for balance and strength, and full bolster that provides weight and ensures safety. They're backed by a lifetime warranty against defects in material and/or craftsmanship. Handwashing with mild cleanser is recommended.

What's in the Box 3-inch vegetable knife; 3-inch paring knife; 6-inch utility knife; 7-inch santoku knife; 8-inch chef's knife; 8-inch carving knife; 8-inch bread knife; set of six 4.5-inch steak knives; 9-inch honing steel; kitchen shears; storage block

I have messed around with cheap knives before and you always get what you pay for. Without paying top dollar for these knives you get a great quality knife that cuts well and looks great. Be warned the steak knives are not the Forged Synergy quality, they are indeed from the Fine synergy set but they are only steak knives so that was not a big deal for me. I have owned these knives for 6 months now and have had no major issues. You should hand wash them and if you leave them soak in the sink full of water or leave them wet for an extended period of time you will get rust spots. These spots are easily removed with a Green scratchy pad. If you just want some basic dishwasher safe knives then I would go with something cheaper. If you want a good set of knives that may not be the Best out there but also don't want to spend a fortune then you'll be happy with these.

The latest cutting performance tests carried out by the FGW (Forschungsgemeinschaft Werkzeuge und Werkstoffe e.V., a German research association for tools and materials based in Remscheid) confirm that Wusthof forged knives offer the best quality when compared to other well-known, single-layer brands.

    PEtec

The extensive tests were carried out in accordance with DIN EN ISO 8442-5. Wusthof knives have a considerably higher ICP (Initial Cutting Performance) and maintain this performance for an extremely long time (TCC = Total Card Cut).

When compared with the winners in the "cook's knife" category awarded by German consumer organization "Stiftung Warentest" in its 1st edition of 2008, forged Wusthof knives featuring the new PEtec technology produce a result which is about 20% higher.

    The Technology:

    • Blades are measured by a laser before sharpening
    • Computer programs calculate precise sharpening angle for each blade
    • Knives are then sharpened on a whetstone using precision robots
    • Knives are given a final polish using a special disc

    The Benefits:

    • Extremely high initial cutting performance
    • Exceptionally long edge retention / long service life of blade
    • Optimum cutting edge along the entire length of the blade
    • Unique, consistently high and reproducible quality

    How Wusthof Knives are Made

Wusthof knives are known for their outstanding sharpness. By honing and sharpening the knives yourself you can maintain this feeling for a lifetime of use (see "Honing and Sharpening" section below for detailed guidelines on how to do so).

Evolution The evolution of a precision forged knife

Over 40 different manufacturing steps are needed to produce a forged Wusthof knife from one solid piece of steel.

Here you will find a detailed explanation of some of the most important production steps.

    1. Sheet bar of high-carbon no-stain steel 2. Precision forged piece 3. Tempered to 58-degree Rockwell 4. Polished 5. Scales of handles and rivets 6. The Wusthof Cook's knife

Types of Blades The Right Blade for Every Purpose

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.

    The Differences:

Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.

Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.

Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.

Cleaning & Storage Proper care for long-lasting cooking enjoyment

If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel.

    Wash

For proper storage we recommend the following options:

    • Knife blocks in a variety of shapes, colors and configurations. The handy knife block provides protection for your blades as well as a visual compliment to your kitchen decor.
    • Magnet Bars in wood, synthetic material or aluminum. Two extra strong magnet segments provide a safe, easily visible and space-saving storage option.
    • Cook's cases in rolls and briefcase styles. This is the ideal method for professionals to store and transport their tools safely.

I am a serious steak afficionado and was looking for the very best in steak knives. My other cutlery are also Wusthof, so these were a natural choice. I was not disappointed and my first meal was a huge success. My guests were wowed by the quality and style of these knives, which cut through bone-in steak like butter.

There are cheaper knives out there, but you get what you pay for. These will be with me for a lifetime and were worth every penny. Also, the price I got on this site was hands down, the best value.

They are not the top of the line but respectable for a budding gourmet. Proof of their effectiveness can be found underneath the several bandaids I have had to wear since accidentally mishandling the bed knife once and a steak knife once.

What a joy to have decent knives to use in the kitchen. It helps to inspire me as a cook.

Great for the price and definitely do not put these in the dishwasher. I am proud to own, even if it is on the lower end of the spectrum, one of the finest knife collections currently on the market.

    From the Manufacturer

Who is Victorinox? Although Victorinox is known the world over as the creator of the Original Swiss Army Knife, the company started out in 1884 as a cutlery workshop. By the time company creator Karl Elsener delivered his first pocket knife to the Swiss Army, his cutlery business was already booming. Over the next century, Victorinox cutlery became a top-rated choice among professionals worldwide, with over 300 blades to offer.

Victorinox knives have regularly appeared as highly ranked and recommended kitchen tools in Cook’s Illustrated, Men’s Health, The Cincinnati Enquirer, New York Magazine, and Natural Health, just to name a few. In 2009, the company announced a partnership with professional chef, Daniel Humm, of Eleven Madison Park in New York City. In addition, building on the success of its cutlery business, Victorinox has brought all the same quality and expertise to a wider range of products and accessories, including other kitchen tools, pocket tools, watches, luggage, and clothing.

Who is R.H. Forschner? Victorinox had been a staple in European commercial cutlery for over 50 years when approached by New York’s R.H. Forschner, known since 1855 as a builder of scales for butchers, to be their sole cutlery supplier. The two companies joined forces in 1937, and R.H. Forschner subsequently became North America’s dominant professional brand, as ubiquitous in the bustling meatpacking plants of the Midwest as it is in the gleaming, four-star restaurant kitchens of Midtown Manhattan.

As a division of Victorinox/Swiss Army Brands, R.H. Forschner marketed cutlery under the brand name “RH Forschner by Victorinox” and distributed to the commercial, food service, and retail trade classes. That brand has been considered a top choice of professionals worldwide with over 300 styles of blades bearing the R.H. Forschner name. However, in 2009, in conjunction with Victorinox’s 125th anniversary, the company, Victorinox Swiss Army, Inc., has decided to remove the “RH Forschner” name from all blades. Blades thenceforth only include the “Victorinox” name.

What is a stamped blade? A stamped knife can usually be identified by the absence of a bolster. Stamped blades are cut into their shapes from cold-rolled pieces of steel and then ground, tempered, and sharpened. Creating them requires many less steps than forging and results in lighter, narrower blades. Some professionals prefer the thicker, heavier forged blades, but many pros, who spend much of their day cutting and slicing, enjoy a lighter knife since it’s less fatiguing and easier to manipulate at speed.

Stamped knives are easier to produce and therefore less expensive. They perform very well and can approach the quality of a forged blade, but not the weight or feel. Victorinox manufactures a complete range of stamped blades with unique, patented Fibrox handles and they are considered among the greatest values in the knife industry.

What knives do I need to own? Knife choice or selection is determined by many factors--size, function, style, and preference. The most important factor is function. Different knives have different uses. It is important to use the proper knife for a specific task, since proper knife selection and the use of a proper-sized, sharp knife make for safe cutting. General kitchen tasks and the knife to use for them are as follows:

Paring: The most common to own and use, a paring knife is generally for small cutting jobs and peeling of vegetables or fruit. The blade size is usually from three to four inches. Choose the shape and size to fit your hand. Since this is one of the more versatile knives, owning more than one is recommended.

Chef's: The most important tool and essential to every cook, a chef‘s knife is most often used in a rocking method to mince, dice, and chop vegetables and herbs. This one is known as the chef’s best friend.

Slicer: Most commonly used to slice meats, poultry, and seafood, the slicer is an important companion to any host or hostess.

Boning: As its name suggests, a boning knife is used to trim or remove meat and fish from the bone.

Bread: Designed with a special edge, a bread knife makes easy work of cutting through crusty bread, pastries, or any item with a crust and a soft interior.

Fillet: Most often used by pros and seasoned home chefs, the fillet knife is used to fillet meat and fish.

Cleaver: An important addition to any collection, a cleaver is often used to cut or chop through bones.

Santoku: This knife combines the features of a cleaver with a chef's knife. The curved blade helps the rocking motion used for chopping, and the wide blade works well for scooping sliced food off a cutting board and for crushing garlic. The santoku can also be used to slice meat and has a narrow spine for making thin cuts.

Utility: An all-purpose knife often referred to as a sandwich knife, the utility knife peels and slices fruits and vegetables, and even carves small meats.

Shaping: With its curved blade, a shaping knife is great for small precision cuts where control is essential, such as peeling, trimming, or garnishing.

What are the different knife edges and what do they do? Straight: The vast majority of Victorinox knives come with a straight or fine edge. This means it has a perfect taper along the blade and no serrations. It is designed to cut without tearing or shredding.

Serrated: An edge designed with small, jagged teeth along the edge.

Scalloped: A blade with waves along the edge generally used to cut breads with a hard crust and soft interior, as well as tougher-skinned fruits and vegetables.

Granton: This edge has hollowed-out grooves or dimples on the sides of the blade. These grooves fill with the fat and juices of the product being cut, allowing for thin, even cuts without tearing. Even with the grooves, these are still straight-edge knives and can be honed with a sharpening steel.

How should I care for my cutlery? After use, knives should not be allowed to soak in water. The best practice is to hand wash and dry them immediately. This is especially true if they have been used on fruit or salty foods, which may cause some staining, even on stainless steel. Most knives require very little maintenance and it is worth the effort to protect your investment.

Though Victorinox knives are dishwasher safe, this is strongly discouraged. The dishwasher’s agitation may cause damage. Additionally, harsh detergents can be harmful and cause pitting and spotting on the blades. The handles may also discolor and develop a white film with constant use of the dishwasher. Plus, intense heat associated with dishwashers is not good for the temper of the blade.

How do I keep my knives sharp? All quality knives require proper maintenance to keep them in perfect cutting shape. The best of edges will quickly dull if it strikes metal, glass, or Formica. A wooden cutting board makes the best cutting surface. And, if a slip occurs, a proper cutting board is safer for the user. Frequent use of a Victorinox sharpening steel will keep blades in tip top working condition. All straight-edge knives need steeling to keep their edges.

How to ""Steel"" a Knife 1. Hold the steel firmly in your left hand with the guard positioned to stop the blade should it slip. 2. Hold the knife in your right hand and place on top part of steel as shown. 3. Raise back of blade one-eighth inch. 4. Now, moving the blade only, draw it across the steel in an arching curve, pivoted at your wrist. The blade tip should leave the steel about two-thirds of the way down. 5. Repeat the same action with the Blade on the bottom side of the steel. Always maintain the same pressure and angle on both sides of the steel. 6. Repeat five or six times.

When a sharpening steel no longer does the job, it’s time to take the knife to a qualified knife sharpener who will place a new edge on it. This, along with use of the sharpening steel, will give you many years of sharp, safe blades.

Please note that electric knife sharpeners can be harmful. They have to be used carefully as they remove too much metal, can harm the temper of the blade, and most important can change the factory-applied edge angle.

How should I store my knives? Safety is the biggest concern of storage, both to the user and to protect the knife's edge. Choices include a knife magnet, knife block, drawer insets, and also individual knife protectors.

Sure, I read about how great Forschner knives are for the money, but I considered my old Chicago Cutlery set to be good enough. How much different can one set of cutlery be than another, anyway? After all, I'm no pro chef, just a home kitchen hacker.

Curiosity got the better of me, and I got the Forschner Fibrox eight piece set.

The items in the set are well chosen for the average range of kitchen tasks, although I would like a smaller flexible paring knife rather than the included four inch rabbit (?!) knife. I am mildly surprised at how well the serrated bread knife handles a block of cheddar or a tomato; it might be the favorite of the bunch. I also like the shears, and find the 10" slicer large enough to handle anything I'll ever serve. The boning knife makes taking the skin off a salmon easy. The chef's knife is big enough for me and not too large for my better half.

The Fibrox handles are comfortable, give a secure grip and fit my big paws and my wife's smaller hands. The knives all "feel good" to me, well balanced and solid. Yes, they are sharp, and the included steel hones them with little effort.

If you've read this far, you might be like I was, wondering if good knives can really be that much better than "good enough". The answer is a resounding yes. They really are a pleasure to use, and a job like cutting up a chicken for frying is now a chance for me to enjoy the quality of these knives rather than just annoying drudge work.

If you still aren't sure, order a Forschner Santoku or mini chef's knife to try for yourself, and when you do order the set it will find a home in one of the two empty slots in the block.
